Ingredients

The basics

2 large sweet potatoes, peeled and cut into small cubes
200g dark chocolate

Optional frosting:

100g dark chocolate
Fresh strawberries for garnish

Method

  1. Place the cubed sweet potatoes in a pot of boiling water and cook until tender, about 15-20 minutes. Drain well and set aside to cool slightly.
  2. In a heatproof bowl set over a pot of simmering water (double boiler), melt the dark chocolate until smooth and glossy.
  3. Transfer the cooked sweet potatoes to a blender or food processor. Pour in the melted chocolate. Blend until the mixture is smooth and creamy, scraping down the sides as needed.
  4. Line a baking tray with parchment paper. Pour the sweet potato-chocolate mixture into the tray, spreading it evenly with a spatula. Place in the refrigerator to set for at least 1 hour or more.
  5. Optional: melt the additional 100g of dark chocolate and drizzle it over the set mousse. Decorate with fresh strawberries or your preferred toppings.
