Raspberry Lamington Slice

This super quick and nourishing treat saves the day every time when we are after that chocolate fix and is the perfect addition to any Australia Day gathering. When it comes to nourishing treats we love to keep some in our freezer more often than not, to call upon when in need. Oh, and if you are worried about eating them all in one go (which we may do sometimes) freezing them helps to combat this issue too. Raspberry Lamington Slice



1 cup almonds

½ cup cacao powder

¼ cup coconut oil, melted

½ cup shredded coconut

Pinch ground cinnamon

Pinch sea salt



2 cups frozen raspberries

½ cup cacao powder

1 cup cashews, soaked in hot water for at least 15 minutes

1/2 cup pitted dates, soaked in hot water for at least 15 minutes

2 tbsp water

¼ cup maple syrup

2 tbsp chia seeds (don’t add these until step 4)



½ cup cacao butter, melted

¼ cup coconut oil, melted

2 tbsp hulled tahini

½ cup cacao powder

2 cups shredded coconut



  1. Line a 20cm square baking pan with enough baking paper to overlap two sides of the pan. This makes things much easier when you are ready to lift the slice out at the end.
  2. To make the base combine all the ingredients in a high powered blender for 30 seconds.
  3. To make the filling, place the raspberries, dates and cashews (strained), cacao powder, maple syrup and water into a high powered blender. Give it a good whiz until the ingredients have combined nicely. You may need to pause and give it a stir a few times. If the mixture is too thick, simply add a dash of water until you reach your desired consistency.
  4. Now add the chia seeds, and whiz again for 5 seconds.
  5. Once combined, transfer the mixture onto the base and spread evenly with a spatula. Place in the freezer once again while you are making the topping
  6. For the topping, place all the ingredients (excluding the shredded coconut)in a clean blender, and give it a whiz for 10 seconds just to allow the ingredients to come together. Pour the dreamy chocolate mixture over the filling and place it back into the freezer again now for an hour.
  7. Once the topping has set, remove the baking tray from the freezer, then, using the baking paper, slowly lift the slice out of the pan. Using a hot knife, cut into 14 bars to serve. Keep frozen or refrigerated until ready to serve so they don’t melt everywhere, especially in this heat!
