Raw Carrot Cake with Orange, Ginger and Cashew Cream Icing

So keeping with the theme of this glorious juice, we collected the carrot pulp from our juicer and thought we would take a modern spin on this household favourite. We most definitely love a wholesome treat once in a while and boy does this one tick all the boxes. There is just something so very comforting about a carrot cake isn’t there? Take a look below to see how we pimped the humble carrot cake up with a little bit of courage.

Carrots

Carrots are famous for their contents of beta-carotene, lutein, and zeaxanthin which help to in keeping those beautiful eyes of yours healthy for years to come by maintaining the strength of your eye’s photoreceptors and reducing your risk of glaucoma. In addition to this, carrots are also important for cognitive function, liver detoxification, reducing risk of cancer and heart disease as they are loaded with antioxidants which fight off the free radicals present within the body. The high content of fibre in carrots assists with digestion to help move waste out of the body and prevent constipation or even haemorrhoids.

Medjool Dates

In our eyes these are nature’s best sweetener as they are loaded with potassium, phosphorus, magnesium, Vitamin B6 and calcium. Medjool dates help to prevent and relieve constipation, decrease cholesterol, provide the body with a natural boost of energy, support a healthy heart and strong bones.

Ginger

Cinnamon is a powerful spice that has been used medicinally around the world for thousands of years, thanks to its abundance of nutrients such as manganese, Vitamin K and calcium that help to stabilise blood sugar levels, prevent cancer and neurodegenerative disease. Not only is cinnamon incredible for our insides, it is also incredible topically on our skin as it works to stop the acne-causing bacteria.

Turmeric is a rich source of antioxidants which help to reduce inflammation, provide pain relief,  boost skin health, helps to reduce the risk of cancer, reduce depression, helps to prevent blood clots and assists liver detoxification.

Carrot Cake with Orange, Ginger and Cashew Cream Icing

 

Ingredients

 

Carrot Cake

2 ½ cups carrot pulp or grated carrot

1 cup desiccated coconut

6 Medjool dates pitted

1 cup walnuts, crushed + a handful for garnish

1 ½ cups shredded coconut

½ cup pepitas

1 tsp ground ginger

1 tsp ground cinnamon

2 tsp ground turmeric

Zest 1 orange

Pinch of sea salt

 

Orange Ginger Cashew Cream Cheese Icing

1 thumb sized fresh ginger, finely grated

1 cup raw cashews, soaked in hot water for at least an hour

3 tbsp organic maple syrup

½ tsp vanilla powder

Juice ½ orange

⅓ cup coconut oil, melted

¼ cup of filtered water

Pinch sea salt

Method

  1. Line a baking tray with baking paper and allow the edges of the paper to hang over the sides. This makes it easy to remove from the tin when you are finished. We also love using mini silicon cake moulds and these were really easy to remove the cakes too.
  2. Combine all of the carrot cake ingredients in a food processor or in batches if using a high powered blender.  Blend until the ingredients are well combined.
  3. Transfer the mixture into the baking run, and smooth over with a spatula. Place in the freezer on a level surface while you prepare the cream cheese icing.
  4. To make the orange and ginger cashew cream cheese icing, combine all of the ingredients in a high powered blender and blend until it turns into a silky smooth mixture. You may need to turn off the blender a few times and scrape down the sides, as the mixture can tend to get stuck sometimes.
  5. Take the carrot cake out of the freezer and pour over the icing (if using a large tin), smooth with a spatula and then place the baking tray back into the freezer for another 2 hours minimum. If you are using the mini cake moulds as we did, use a table knife to evenly spread the icing over each cake.
  6. Once you are ready to serve, take the cake out of the freezer and allow to thaw for 10 – 15 minutes before serving.
  7. Crush the remaining walnuts and sprinkle over the cake/cakes to serve.
