Zucchini, Dill and Pepita Savoury Muffins

Here at Sol Cleanse, we are deeply passionate about getting more of you eating more glorious fruits and vegetables during each meal of the day. These muffins not only taste delicious but they are also bursting full of plant-based goodness. For those of you who are short on time in the mornings or are looking for a sustaining pre-workout snack to fill the gap between work and your afternoon training session, you must give them a go! We love making a big batch and freezing them to pull out of the freezer when in need, topped with a dollop of homemade tomato relish.

Buckwheat

Despite the name, buckwheat is gluten-free and it actually a seed from a fruit similar to that of Rhubarb. Buckwheat is high in both protein and fibre which helps to maintain healthy muscle mass, improves digestion, helps to lower cholesterol, blood pressure and helps to regulate blood glucose.

Organic Eggs

Eggs are one of nature’s true superfoods, where we always choose organic free range varieties to make sure we deliver our bodies with the highest quality and ensure the chickens had a happy life too. Not only are eggs incredibly versatile, they offer a long list of benefits for our health, these include; provide a good source of choline to support a healthy nervous system and a healthy metabolism, lowers LDL (bad cholesterol), prevent fatigue, provides protection against heart disease and supports strong bones.

Pepitas

Filled with antioxidant support to help prevent cancer containing a hefty dose of vitamins and minerals such as Vitamin E, zinc, manganese. Pepitas also help to build immunity, thanks to their antimicrobial, anti-fungal and anti-viral properties, help to prevent diabetes, promote glowing skin and luscious locks thanks to their content of Vitamin C, help to maintain healthy cholesterol ratio, contain serotonin to manage stress and promote restful sleep and promotes satiety (feelings of fullness).

Psyllium Husk

High in fiber to help keep your detoxification pathways working nicely which helps to reduce the load on the liver and reduce inflammation

Zucchini

Improves digestion, helps rid the body of free radicals and excess inflammation, helps to lower blood sugar, a rich source of B-vitamins which help to reduce fatigue and improve mood.

Zucchini, Dill and Pepita Savoury Muffins

Ingredients

2 zucchinis, grated

2 organic eggs, whisked

1 bunch dill, roughly chopped

1/2 cup organic coconut cream

1 cup buckwheat flour

¼ cup chia seeds

2 tsp gluten-free baking powder

1 tbsp psyllium husk

½ cup pepitas + extra to decorate

2 tbsp coconut oil, melted

1 tbsp filtered water

Sea salt and pepper to taste

Method

  1. Preheat oven to 160°C

  2. Combine all dry ingredients in a large mixing bowl and use a wooden spoon to combine. Now combine all of the wet ingredients in a medium-sized mixing bowl and use a fork to combine. Once combined, add the wet mixture to the dry mixture and stir with a wooden spoon.

  3. Spoon the mixture into lined muffin tins and place in the oven.

  4. Bake for 25 minutes or until muffin is cooked through (test to see if they are cooked by poking a skewer in the center of a muffin and wait for it to come out clean).
