Homemade Vegan Chocolate Recipe

Cacao – the antioxidant king from Amazonia

Cacao contains a high level of antioxidants, theobromine and minerals and is a healthy alternative for recipes that call for cocoa powder. Cacao powder can be quite bitter but retains more of the bean’s original nutritional value.The fibre in cacao powder promotes healthy digestion and can reduce the symptoms of digestive problems. Antioxidants

As we’ve said… it is the antioxidant king! Organic cacao has over 40 times more antioxidants of blueberries! It has an ORAC score of 98,000 per 100g, vs blueberries. ORAC scores measure the ability of antioxidants to absorb free radicals (from toxins and pollution in our environment), which are known to cause cell and tissue damage and has been shown to lead to diseases like cancer.

Iron

Cacao is the highest plant-based source of iron at an incredible 7.2mg per 100g! To get the maximum benefits, it’s best paired with some vitamin C.

Magnesium is important for a healthy heart and assists in turning glucose into energy, helping your brain work with laser-sharp clarity and focus.

Ingredients

1 C/ 150g cocoa butter

1 C cacao powder

½ C coconut sugar (or your sweetener of choice)

2 tsp vanilla bean paste

Method

  1. Melt the cocoa butter in a small saucepan on a low heat. When it is close to being melted add in the coconut sugar and stir until the sugar dissolves. 
  2. Stir in the cacao and vanilla paste. 
  3. If you are making plain chocolate treats, pour straight into moulds and place in the fridge. 
  4. If you are using for easter egg treats see instructions in other recipes for partially filling moulds. Alternatively you might like to stand the saucepan in a bigger bowl with hot water to keep the chocolate liquid while you prepare for the other recipes.
