Crispy Rice Salad

Ingredients

Crispy Rice

1 1/2 cups jasmine rice
2 tablespoons tamari
1 tablespoon sesame oil
1 teaspoon chilli powder
1 teaspoon raw honey

Salad

250g baby cucumbers, quartered
200g edamame beans
1 bunch spring onion, thinly sliced
1 bunch fresh mint, finely chopped
1 cup granulated peanuts
2 avocados, diced
2 large mangos, diced

Dressing

1/2 cup extra virgin olive oil
2 lemons, juiced
3 tablespoons tahini
2 tablespoons raw honey
2 garlic cloves, minced
Salt & pepper, to taste

Method

  1. Preheat the oven to 200ºC. Line a large baking tray with baking paper.
  2. Bring a large saucepan of water to a boil over high heat. Cook jasmine rice according to packet instructions. Discard, then spread the rice across the prepared baking tray. Set aside to cool.
  3. In a small bowl, whisk together the tamari, sesame oil, chilli powder and honey. Pour this mixture over the cooled rice, tossing gently to ensure the rice is well coated.
  4. Spread the rice evenly on the tray once more, then bake for 35–40 minutes, or until crispy. Remove from the oven and set aside. 
  5. While the rice bakes, prepare the salad by combining all salad ingredients in a large bowl. Gently toss and set aside. 
  6. In a pouring dish, prepare the dressing by whisking all ingredients together. Taste and adjust the seasonings as needed.
  7. To assemble, layer the crispy rice in a large serving bowl, followed by the salad mix. Drizzle the dressing over the top and gently toss to combine. Divide into four bowls, serve and enjoy!
