Festive Leftovers Prawn Dumplings

Our homemade prawn dumplings are a delicious way to transform Christmas leftovers! Whether it’s extra ham, turkey or leftover veggies, this recipe is versatile enough to swap in whatever you’ve got on hand. In these soft wonton pouches, we’ve wrapped in six different plant sources so you don’t miss your daily veggie intake post Christmas celebrations. These dumplings are festive, fun, surprisingly easy to make and perfect to enjoy Boxing Day with friends and family.


Ingredients

Dumplings

300g prawns, peeled and deveined, cut into small pieces
1/2 cup cabbage, finely shredded
1/4 cup spring onion, finely chopped
1 tablespoon ginger, grated
3 garlic cloves, finely chopped
2 tablespoons coriander, finely chopped
2 tablespoons chives, finely chopped
1 teaspoon sea salt
25 Gluten free wonton wrappers
1/2 cup water

Sesame dressing

1/4 cup tamari
2 tablespoons rice wine vinegar
1 teaspoon sesame oil
1 teaspoon tabasco
1 teaspoon black sesame seeds

Method

  1. In a large mixing bowl, combine the prawns, shredded cabbage, spring onion, grated ginger, garlic, coriander, chives and sea salt. Mix well to ensure the ingredients are evenly distributed.
  2. Place a wonton wrapper on a clean, dry surface. Add a small spoonful (about 1 teaspoon) of the prawn mixture to the centre of the wrapper. Dip your fingertip in water and moisten the edges of the wonton wrapper. Lightly wet the edges with water and fold the wrapper over the filling to form a rectangle shape, pressing the edges together to seal tightly. Gently wrap the bottom two edges pressing firmly on top of each other to form a rectangular ingot wonton. Repeat with the remaining wrappers and filling.
  3. Cook dumplings by either steaming for 25 minutes, or boiling for 4–5 minutes. Remove dumplings and discard any liquid and arrange on a large serving plate to slightly cool.
  4. In a small pouring bowl, whisk all sesame dressing ingredients. Serve dressing on the side for dipping. Garnish dumplings with any leftover coriander, chives and sesame seeds.
