Our Avocado Chocolate Mousse is a simple yet nourishing way to enjoy a rich chocolate dessert. The addition of our Embody Cacao Organic Protein takes this dessert to the next level, providing us with a nourishing boost of plant-based protein, antioxidants and essential nutrients. It’s the perfect way to satisfy chocolate cravings while fuelling your body. Super smooth, naturally sweetened, easy to batch prep and ready in minutes!


Ingredients

1/2 cup dark chocolate chips
1 teaspoon coconut oil
2 ripe avocados, mashed
1/3 cup unsweetened coconut milk
2 tablespoons cacao powder
2 tablespoons Embody Cacao Organic Protein
1 teaspoon vanilla bean extract
1 teaspoon sea salt

To serve

1 tablespoon Greek coconut yoghurt
1 tablespoon grated dark chocolate
6 fresh raspberries
Flaky sea salt

Method

  1. In a small saucepan gently melt the dark chocolate chips with coconut oil. Stir regularly until smoothing. Alternatively, heat in the microwave in 30 second intervals, stirring until smooth. Set aside to cool slightly.
  2. In a high-speed blender, combine the mashed avocados, melted chocolate, coconut milk, cacao powder, Embody Cacao Organic Protein, vanilla bean extract and sea salt. Blend until silky smooth and well combined. Scrape down the sides as needed.
  3. Transfer the mousse to serving glasses or bowls and refrigerate for at least 30 minutes to allow the texture to thicken.
  4. Top each serving with a dollop of Greek coconut yoghurt, a sprinkle of grated dark chocolate, fresh raspberries and a pinch of flaky sea salt.
