Beetroot is rich in antioxidants and betaine, which support liver detoxification and help combat oxidative stress. This is the perfect cocktail alternative for anyone embracing dry January or looking for a healthier way to celebrate.

Ingredients

4 medium beetroots, diced
2 inch ginger knob
5 limes
2 tablespoons runny honey (optional)
2 cups sparkling water
Fresh mint, to garnish

Method

If making from scratch:

  1. Juice beetroot, ginger and lime using a cold pressed juicer. Alternatively if you don’t have a juicer, add the beetroot and ginger to a high-speed blender with 1 cup of water.
  2. Blitz until all ingredients are smooth. If the mixture is too thick, add a small splash of water to help it blend more easily. Strain the juice through a fine mesh sieve or muslin cloth to remove excess pulp.
  3. Squeeze the lime juice directly into the beetroot juice. Stir in the honey (if using) until fully dissolved.
  4. Add 2-3 generous handfuls of ice to a large serving jug. Pour in the beetroot juice and top with sparkling water. Stir gently to combine.
  5. Divide the mocktail between 4-6 cocktail glasses. Garnish each glass with fresh mint and enjoy!

  1. In a large serving jug, pour 2-3 bottles over ice and top with sparkling water.
  2. Divide between glasses, garnish with mint, and enjoy!
