This vibrant Berry & Rocket Salad is full of colour, freshness and skin loving nutrients–perfect as a light Christmas side or a bright addition to any summer table. The combination of raspberries, mulberries and crisp rocket delivers vitamin C rich antioxidants that help support collagen production and promote healthy, glowing skin. Ingredients

Salad

120g rocket
1 small Lebanese cucumber, finely sliced
1 cup mulberries
1 cup raspberries
1 cup pecans
½ cup slivered almonds, toasted
1 avocado, sliced
Lime wedge, to serve

Camu Camu Vinaigrette

⅓ cup extra virgin olive oil
1 tablespoon balsamic vinegar
1 lime, zest and juice
1 teaspoon Organic Camu Camu Powder
1 teaspoon raw honey

Method

  1. Add the rocket to a large serving bowl. Top with finely sliced cucumber, raspberries, mulberries, pecans, slivered almonds and avocado slices.
  2. In a small bowl or jar, whisk together the extra virgin olive oil, balsamic vinegar, lime zest, lime juice, raw honey and Camu Camu powder until smooth and emulsified.
  3. Just before serving, drizzle the vinaigrette over the salad and toss gently to coat the leaves and berries without crushing them.
  4. Finish with an extra squeeze of lime if desired and serve immediately.
