Ingredients
¼ red cabbage, thinly sliced
½ cup pumpkin seeds, lightly toasted
1 bunch flat-leaf parsley, roughly chopped
1 bunch mint, roughly chopped
Dressing
3 tbsp extra virgin olive oil (or flaxseed oil)
½ orange, zest and juice
1 clove garlic, minced
1 tsp ground cumin
Sea salt and black pepper, to taste
Method
- Add the red cabbage, parsley, and mint to a mixing bowl.
- In a small jar, combine dressing ingredients and shake well.
