Salmon & Quinoa Green Goddess Bowl

Ingredients

1 salmon fillet, skin on
1/2 cup tri quinoa
1/2 avocado, mashed
1/4 cup greek coconut yoghurt
2 tablespoons extra virgin olive oil
1 lemon, juice & zest
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup rocket
1/2 cup cucumber, quartered
Fresh coriander, to garnish
Lemon wedge, to serve 

Method

  1. Heat a skillet over medium-high heat and drizzle in olive oil. Once the oil is sizzling, place the salmon fillet skin-side down and cook for 5 minutes until the skin is crispy. Flip and cook for another 3–4 minutes, or until the salmon is cooked through and flakes easily.
  2. Meanwhile, bring a small saucepan of water to a boil and cook the quinoa according to the packet instructions. Drain and set aside.
  3. In a small bowl, mix together the avocado, coconut yogurt, olive oil, lemon juice, lemon zest, salt, and pepper until smooth and well combined.
  4. To plate, start with a bed of cooked quinoa, then place the salmon fillet on top. Serve with fresh rocket, cucumber, coriander and a lemon wedge. Drizzle with the creamy avocado purée and finish with a sprinkle of salt, pepper, chilli flakes and any remaining lemon zest. Enjoy!
