Cool, bright and naturally uplifting, these Summer Kiwi Popsicles are the perfect warm-weather treat.

SERVES 6 GLUTEN-FREE | DAIRY-FREE | VEGAN

These vibrant Summer Kiwi Popsicles are the perfect refreshing treat for warm days–a zesty blend of kiwi, lime and honey layered with creamy coconut yoghurt mixed with Sol Cleanse Vanilla Plant Protein Powder. The protein powder adds a subtle vanilla flavour and gives a dose of plant-based protein, making these popsicles a satisfying, healthy snack for summer. Light, energising and naturally sweet, they’re the perfect way to cool off while supporting your wellbeing.


Ingredients

5 kiwi, peeled and sliced
3 large limes, juiced
2 tablespoons runny honey
½ cup plain coconut yoghurt
1 tablespoon Sol Cleanse Vanilla Embody Organic Protein

Method

  1. Peel and slice all five kiwi fruits, setting aside 6 thin slices from one kiwi to decorate the moulds.
  2. Add the remaining four kiwi, lime juice and honey to a high-speed blender. Blend until smooth.
  3. Arrange the reserved kiwi slices along the sides of the popsicle moulds.
  4. Pour the blended kiwi mixture into each mould, leaving about 3–4 cm of space at the top for the coconut layer.
  5. Place popsicle sticks in the centre of each mould and freeze for 2 hours. This allows the first layer to set and prevents the two layers from mixing.
  6. In a small bowl, mix the coconut yoghurt and Sol Cleanse Vanilla Embody Organic Protein until smooth and creamy.
  7. Remove the moulds from the freezer and fill the remaining space with the coconut protein mixture. Return to the freezer for at least another 2 hours. Serve chilled.
