Chai Spiced Banana Bread

Spice up your banana bread with our new Organic Chai Powder—a warming blend of cinnamon, ginger, cardamom and more, known to support digestion, circulation and blood sugar balance. This gluten-free loaf is soft, moist and naturally sweetened with maple syrup, with chunks of dark chocolate in every bite. Topped with a simple chai-spiced glaze, it’s an easy way to elevate a classic favourite.


Ingredients

4 overly ripe bananas
1/4 cup coconut oil, melted
1/4 cup organic maple syrup
2 eggs
2 teaspoons vanilla bean extract
1.5 cups Gluten-Free plain flour
2 tablespoons Sol Cleanse Organic Chai Powder
2 teaspoons baking soda
1 teaspoon sea salt
160g dark baking chocolate (Pana Chocolate)

Chai Spiced Glaze:

1/2 cup grass-fed butter, melted
1 tablespoon Sol Cleanse Organic Chai Powder
1 tablespoon organic maple syrup

Method

  1. Preheat your oven to 180°C. Lightly grease or line a loaf tin with baking paper.
  2. In a large bowl, mash the bananas until smooth. Whisk in the melted coconut oil, maple syrup, eggs and vanilla bean extract until well combined.
  3. Add the flour, Sol Cleanse Organic Chai Powder, baking soda and sea salt. Gently mix until just combined—be careful not to over mix. Fold through the chopped dark chocolate chunks.
  4. Spoon the batter evenly into the prepared tin. Bake for 20–25 minutes, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool slightly before serving.
  5. Meanwhile, make the chai glaze. In a small bowl, whisk together the butter, Sol Cleanse Chai Powder and maple syrup (around 3 minutes with a whisk or electric beater).
  6. Spread the chai-spiced glaze generously over warm banana bread.
