These are infused with grounding and warming spices of Christmas, while delivering a protein boost thanks to Sol Cleanse Embody Cacao Protein. Perfect for festive celebrations, these truffles make a delicious homemade gift or a healthier dessert option for Christmas Day. Treat yourself and your loved ones to this recipe!


Ingredients

1.5 cup raw almonds
1/2 cup rolled oats
2 tablespoons Sol Cleanse Embody Cacao Protein
1.5 teaspoon ground ginger
1 teaspoon nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon sea salt
10 large medjool dates, pitted
1 tablespoon molasses
1 cup dark chocolate chips
1 teaspoon coconut oil
2 crumbled gingernut biscuits (optional, to garnish)

Method

  1. Combine raw almonds, rolled oats, cacao protein, ginger, nutmeg, cinnamon and salt in a high-speed blender or food processor. Pulse until you have a crumbled mixture.
  2. Add medjool dates and molasses, then pulse again until the texture becomes sticky and dough like. You should be able to pinch the dough together with your fingers.
  3. Line a tray or plate with baking paper. Roll the dough into 12 balls and place on the prepared tray.
  4. Heat the chocolate chips and coconut oil over the stove, stirring regularly until chocolate is completely smooth.
  5. Transfer melted chocolate to a bowl and dip each ball of dough into the chocolate to evenly coat the surface. Place each truffle on the baking sheet and garnish with crumbled gingernut (optional). Store in the refrigerator for 15 minutes to set and enjoy!
