These creamy Lime & Green Apple Mini Cheesecakes highlight Sol Cleanse Harvest Greens powder as the star ingredient, bringing both flavour and a concentrated boost of nutrients to every bite. Ingredients

½ cup pistachios
5 medjool pitted dates
2 cups cashews
2 tablespoons organic maple syrup
1 tablespoon Sol Cleanse Harvest Greens
1 tablespoon coconut oil
1 lime, juiced
½ cup green apple juice

Method

  1. Soak the cashews in room temperature water for at least 1 hour to soften. Drain and rinse well before using.
  2. Place the pistachios and dates into a food processor and blend until a sticky, crumb-like mixture forms. Press the mixture firmly into the base of two lined 10cm springform pan to create an even layer. Place in the fridge to set while you prepare the filling.
  3. Add the soaked cashews to the food processor along with the raw honey, Harvest Greens, coconut oil, lime juice and green apple juice. Blend until completely smooth and creamy, scraping down the sides as needed.
  4. Pour the filling over the base and smooth the top. Place in the fridge for at least 3–4 hours, or until set. 
  5. Remove cheesecakes from the pan and garnish with leftover pistachios and a slice of lime. Slice and serve chilled.
