When the afternoon slump hits, these Matcha Bliss Balls are the kind of snack you'll be glad you made ahead. Medjool dates, nuts and coconut come together with a spoonful of Sol Cleanse Organic Matcha Powder for something naturally sweet, satisfying and full of gentle energy. Matcha adds its earthy flavour alongside naturally occurring antioxidants, so every bite feels like a little bit of goodness. Gluten free, dairy free, refined sugar free and vegan, they take minutes in one food processor and store beautifully in the fridge, ready whenever you need them.


Ingredients

10–12 medjool pitted dates
½ cup pumpkin seeds
½ cup roasted almonds
1 cup shredded coconut
1 heaped tablespoon almond butter
1 tablespoon coconut oil, melted
1 teaspoon Sol Cleanse Organic Matcha Powder
1 teaspoon vanilla
½ teaspoon cinnamon
Pinch of salt

Method

  1. Add all ingredients to a food processor and blend until the mixture forms a fine crumb and begins to come together. If it feels a little dry, add a touch more coconut oil.
  2. Combine a little extra shredded coconut with a sprinkle of matcha on a plate.
  3. Roll the mixture into bite-sized balls and coat each one evenly in the coconut and matcha.
  4. Store in the fridge and enjoy.
